High Levels of Alpha-Carotene Linked to Longer Life Span

Carrots are orange because they are full of carotenoids, a class of yellow, orange or red fat-soluble pigments.

The most famous carotenoid is beta-carotene, which the body converts to vitamin A and also has antioxidant properties.

Additionally, carrots contain alpha-carotene, another A-vitamin precursor. 

High levels of alpha-carotene were linked to a longer life span in a study published in a 2010 issue of the Archives of Internal Medicine.

Carrots are also rich in lutein and zeaxanthin, which may protect the eyes from severe age-related macular degeneration.
